Poor Man’s Stew

Directions

  1. In a large pot, brown the ground beef over medium-high heat. Make sure to stir and break it up as it cooks, allowing the beef to develop a tremendous depth of flavor. Once browned, drain any excess fat to keep your stew balanced and not greasy.

  2. Next, stir in the tomato paste. Cook for another minute to release its flavor. This step enhances the dish’s base, providing a tremendous richness that makes it all the more enjoyable.

  3. Add the diced potatoes, carrots, and onion to the pot. The combination of these ingredients offers a delightful medley of textures. Mix everything well, and let those flavors start to mingle.

  4. Pour in the beef broth and diced tomatoes, along with the soup mix, parsley flakes, salt, and pepper. Stir gently to ensure everything is well combined. The liquid should cover the ingredients nicely, adding a tremendous amount of moisture.

  5. Bring the stew to a boil. This step helps to activate the flavors. Once boiling, reduce the heat to low and let it simmer for 30 to 40 minutes. This slow cooking allows the vegetables to become tender and infuses the broth with all of the lovely flavors.

  6. Serve hot, garnished with fresh parsley if desired. The addition of parsley not only adds color but also a fresh contrast to the hearty stew. Enjoy a warm bowl, and relish in the soothing qualities of Poor Man’s Stew.
