Pistachio Gooey Butter Cake

Directions

  1. Preheat the oven to 350°F (175°C). Grease a 9×13 inch baking dish well so the cake can come out easily after baking.

  2. In a large bowl, combine the yellow cake mix, melted butter, and 1 egg. Mix until well combined. The mixture should be thick and sticky. Press this mixture evenly into the bottom of the prepared baking dish to form the base layer.

  3. In another bowl, beat together the softened cream cheese, 2 eggs, powdered sugar, and pistachio pudding mix until the mixture is smooth. It should have a creamy texture that looks inviting.

  4. Pour the cream cheese mixture over the cake layer in the baking dish. Ensure it spreads evenly to cover the base, creating a lovely contrast with the bottom layer.

  5. If you’re using chopped pistachios, sprinkle them on top of the cream cheese mixture for added flavor and texture. This will give the cake a delightful crunch once baked.

  6. Bake in the preheated oven for 30 to 35 minutes. The edges will turn golden, while the center remains set but still slightly gooey, which is the hallmark of this tremendous cake.

  7. Once baking is complete, allow the cake to cool for a bit before serving. This makes it easier to cut and enhances the flavor as it settles. Enjoy every rich and gooey bite!
