Pistachio Cream Bars

Directions

  1. Preheat the oven to 350°F (175°C). Grease a 9×13 inch baking dish to prevent sticking and ensure easy removal.

  2. In a bowl, mix together the flour and sugar. The combination should be even. Cut in the softened butter until the mixture resembles coarse crumbs. This texture is key to forming a sturdy but delicate base. Press it evenly into the bottom of the prepared baking dish, ensuring an even layer.

  3. Bake for 15-20 minutes or until lightly golden. The aromas will fill your kitchen, creating a tremendous atmosphere. Once baked, let the crust cool for a few minutes in the baking dish.

  4. In another bowl, beat together the cream cheese and powdered sugar until smooth. This cream cheese layer is critical for creating a delicious balance between the crust and the pistachio mixture. Spread this mixture evenly over the cooled crust with a spatula, reaching all corners.

  5. In another bowl, whisk the pistachio pudding mix with the milk until thickened. The transformation is almost magical as the mixture becomes a lovely vibrant green. Spread the pudding mixture over the cream cheese layer, ensuring it covers the entire surface for a harmonious blend.

  6. Top with the chopped pistachios. This step adds not just flavor but also a delightful crunch that contrasts wonderfully with the creamy layers.

  7. Refrigerate for at least 2 hours before slicing into bars and serving. This chilling time allows the flavors to meld beautifully and ensures the bars hold their shape when cut.
