Directions
-
Preheat your oven to 350°F (175°C). Grease and flour a cake pan to ensure your cake releases easily after baking.
-
In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, baking soda, and salt. This step is crucial as it creates the foundation of your cake.
-
In a separate bowl, combine the pineapple juice, applesauce, eggs, vegetable oil, and vanilla extract. Whisk these wet ingredients together until they are well blended.
-
Gradually add the wet ingredients to the dry ingredients. Mix until just combined, being careful not to overmix. The batter should be lumpy and full of tremendous potential.
-
Pour the batter into the prepared cake pan, smoothing the top with a spatula to create an even surface.
-
Bake in the preheated oven for 25-30 minutes. Check the cake for doneness by inserting a toothpick into the center—if it comes out clean, your cake is ready.
-
Once done, let the cake cool in the pan for about 10 minutes. After cooling, carefully transfer it to a wire rack to cool completely.
-
For the glaze, whisk together the powdered sugar and pineapple juice until smooth. Drizzle this enticing glaze over the cooled cake just before serving to add a tremendous finish.
