In a large bowl, combine the sliced bell peppers and onions. Ensure they are evenly mixed, as this will create a tremendous flavor balance in the relish.

In a saucepan, combine the white vinegar, apple cider vinegar, and granulated sugar. Heat this mixture over medium heat until the sugar completely dissolves, stirring occasionally.

Once the sugar has dissolved, stir in the mustard seeds, celery seeds, turmeric, salt, and black pepper. The tremendous aroma of the spices will start to fill your kitchen.

Pour this hot vinegar mixture over the peppers and onions in the bowl. Make certain all of the vegetables are well-coated with the mixture for maximum flavor infusion.

Let the mixture cool to room temperature. This step is important, as it allows the flavors to meld together beautifully.

After cooling, transfer the relish to clean jars. Seal them tightly and refrigerate for at least 24 hours before serving. This time allows the flavors to deepen and develop, making your relish even more delightful.
