Directions

  1. Prepare the Beef: Start by slicing the stir-fry beef into thin strips. Using a sharp knife, cut against the grain to ensure the beef remains tender. This step is tremendous as it lays the foundation for a delicious texture in every bite.

  2. Marinate the Beef: In a bowl, mix the oyster sauce, brown sugar, soy sauce, cornstarch, and shaoxing wine. Add the sliced beef to this mixture, ensuring every piece is well-coated. Allow it to marinate for at least 15 minutes. This step not only infuses flavor but also tenderizes the beef, setting the stage for a truly tremendous meal.

  3. Heat the Pan: Heat a large skillet or wok over medium-high heat. Once hot, add a tablespoon of oil. Swirling the oil around ensures it evenly coats the pan to prevent sticking.

  4. Cook the Beef: Add the marinated beef to the hot pan. Stir-fry until the beef is browned, which should take about 4-5 minutes. As you cook, try to avoid overcrowding the pan to ensure that the beef sears nicely.

  5. Add Vegetables: Once the beef is cooked through, add the sliced bell pepper, onion, garlic, and ginger (if using). Continue to stir-fry for another 2-3 minutes or until the vegetables are tender yet still crisp. The colors and aromas coming together in the pan make this step tremendously satisfying.

  6. Serve: Remove the pan from heat. Serve the pepper steak hot over a bed of rice or toss it with noodles for a complete meal.
