Directions
-
Preheat your oven to 350°F (175°C). Prepare a loaf pan by greasing it lightly with oil or butter. This step is crucial as it prevents the bread from sticking.
-
In a large mixing bowl, combine the milk, peanut butter, sugar, and eggs. Mix until everything is well blended and the mixture appears smooth and creamy. The peanut butter will add a tremendous richness to the batter at this stage.
-
Next, add the flour, oats, baking powder, and salt to your mixture. Gently stir until just combined. Avoid overmixing to ensure your bread remains tender.
-
Pour the batter into your prepared loaf pan, spreading it evenly. Don’t worry if it seems a bit thick; it’s supposed to be that way!
-
Slide the loaf pan into your preheated oven and bake for 60 minutes. Check for doneness by inserting a toothpick into the center; if it comes out clean, your bread is ready.
-
While the bread is baking, you can prepare the raspberry freezer jam. In a separate bowl, combine the mashed raspberries, granulated sugar, lemon juice, and vanilla extract. This mixture should allow the raspberries to release their tremendous flavor.
-
Stir in the Sure-Jell and water, mixing well. Allow this raspberry jam mixture to sit for about 30 minutes. This waiting period helps to meld the flavors together beautifully.
-
Once ready, pour the jam into cleaned jars. Seal them tightly and refrigerate. This jam can be a fantastic addition to your peanut butter bread.
-
When the peanut butter bread is done, remove it from the oven and let it cool for a bit. Serve it warm with a generous spread of raspberry freezer jam on top.
