Peanut Butter Bread with Raspberry Freezer Jam

Directions

  1. Preheat your oven to 350°F (175°C). Prepare a loaf pan by greasing it lightly with oil or butter. This step is crucial as it prevents the bread from sticking.

  2. In a large mixing bowl, combine the milk, peanut butter, sugar, and eggs. Mix until everything is well blended and the mixture appears smooth and creamy. The peanut butter will add a tremendous richness to the batter at this stage.

  3. Next, add the flour, oats, baking powder, and salt to your mixture. Gently stir until just combined. Avoid overmixing to ensure your bread remains tender.

  4. Pour the batter into your prepared loaf pan, spreading it evenly. Don’t worry if it seems a bit thick; it’s supposed to be that way!

  5. Slide the loaf pan into your preheated oven and bake for 60 minutes. Check for doneness by inserting a toothpick into the center; if it comes out clean, your bread is ready.

  6. While the bread is baking, you can prepare the raspberry freezer jam. In a separate bowl, combine the mashed raspberries, granulated sugar, lemon juice, and vanilla extract. This mixture should allow the raspberries to release their tremendous flavor.

  7. Stir in the Sure-Jell and water, mixing well. Allow this raspberry jam mixture to sit for about 30 minutes. This waiting period helps to meld the flavors together beautifully.

  8. Once ready, pour the jam into cleaned jars. Seal them tightly and refrigerate. This jam can be a fantastic addition to your peanut butter bread.

  9. When the peanut butter bread is done, remove it from the oven and let it cool for a bit. Serve it warm with a generous spread of raspberry freezer jam on top.
