Peach Bellini Cupcakes

Directions

  1. Preheat the oven to 350°F (175°C) and line a cupcake pan with liners. Prepare your ingredients to create a tremendous pre-baking atmosphere.

  2. In a large bowl, cream together the softened butter and sugar until light and fluffy. The blending of these ingredients makes for a fantastic base in your cupcakes.

  3. Beat in the eggs one at a time, making sure each egg is fully incorporated before adding the next one. Stir in the champagne and vanilla extract to add a delightful depth of flavor.

  4. In another bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, mixing until just combined. Careful not to overmix here is key to keeping those textures perfect!

  5. Fold in the peach puree, inviting the luscious essence of fresh peaches into your batter. This addition will make for a tremendously fruity twist!

  6. Fill each cupcake liner about 2/3 full with the batter, ensuring an even rise while they bake. Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted comes out clean.

  7. Allow the cupcakes to cool completely before frosting them with the peach buttercream. This step is important; a warm cupcake will melt the frosting away.

  8. For the peach buttercream, beat together the softened butter and powdered sugar until smooth and creamy. Gradually add the heavy cream and vanilla extract, mixing until you achieve a tremendous fluffy consistency.

  9. Frost the cooled cupcakes with the peach buttercream, then garnish each with fresh peach slices and a sprinkle of sparkling sugar for that extra pizzazz!

  10. Serve and enjoy! Every bite is a taste of both summer and celebration.
