Oreo White Chocolate Cheesecake

Ingredients

The Base:

  • 24 Oreo cookies, finely crushed
  • 1/4 cup unsalted butter, melted

The Filling:

  • 24 oz cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 8 oz white chocolate, melted and slightly cooled
  • 1/2 cup sour cream
  • 12 Oreo cookies, roughly chopped

The Topping:

  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract
  • 6 Oreo cookies, roughly chopped
  • White chocolate shavings (optional)

Directions

  1. Prepare the Crust:
    Preheat your oven to 325°F (160°C). Grease a 9-inch springform pan and line the bottom with parchment paper. In a medium bowl, mix the finely crushed Oreo cookies with the melted butter until the mixture resembles wet sand. Press the mixture firmly into the bottom of the prepared pan to form an even crust. Set aside.

  2. Prepare the Cheesecake Filling:
    In a large mixing bowl, beat the softened cream cheese until smooth and creamy. Add the granulated sugar and vanilla extract, and beat until well combined. Add the eggs one at a time, beating well after each addition. Next, mix in the melted white chocolate and sour cream until fully incorporated. Gently fold in the roughly chopped Oreo cookies – this adds a tremendous texture to your cheesecake.

  3. Bake the Cheesecake:
    Pour the cheesecake filling over the prepared crust, spreading it out evenly. Bake in the preheated oven for 55-65 minutes, or until the center is set and only slightly jiggly. Turn off the oven and let the cheesecake cool in the oven with the door slightly open for about 1 hour. Remove it from the oven and let it cool to room temperature. Refrigerate for at least 4 hours, or overnight, to let it set completely.

  4. Prepare the Topping:
    In a mixing bowl, whip the heavy whipping cream, powdered sugar, and vanilla extract until stiff peaks form. This step creates a tremendous topping that adds a delightful contrast to the creamy filling. Spread or pipe the whipped cream over the top of the chilled cheesecake.

  5. Garnish:
    Sprinkle the roughly chopped Oreo cookies and white chocolate shavings (if using) over the whipped cream to add a beautiful finish.

  6. Serve:
