Make the Cheesecake:
- Preheat your oven to 325°F (165°C). This is a crucial step, as a well-preheated oven will help achieve that desired creamy texture in the cheesecake.
- In a large mixing bowl, beat the softened cream cheese until it’s uniformly smooth. This will take about 2 minutes on a medium speed.
- Gradually add the granulated sugar and the room temperature eggs to the cream cheese mixture. Beat until thoroughly combined. You want a homogeneous blend with no lumps.
- Gently fold in the chopped Oreo cookies. The combination of cream cheese and Oreos creates a tremendous flavor alongside the chocolate cake layers.
- Pour the cheesecake mixture into a greased 9-inch springform pan. You could use parchment paper at the bottom for easier removal.
- Bake in your preheated oven for 45-55 minutes. Check for doneness by gently shaking the pan; the center should lightly jiggle. After baking, cool at room temperature then place in the freezer for about an hour to firm up.
Make the Chocolate Cake:
- Now, preheat the oven again, this time to 350°F (175°C). This helps in achieving a lovely, fluffy cake structure.
- In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt. Mix these dry ingredients well; they will create the foundation of your cake.
- Add the milk, vegetable oil, eggs, and vanilla extract. Beat on medium speed for two minutes until everything is blended nicely.
- Stir in the boiling water. The batter will be thin, which is entirely normal and adds moisture to the cake once baked.
- Divide the batter evenly into two greased and floured 9-inch round pans.
- Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Cool completely on a wire rack.
Make the Ganache:
- In a small saucepan, heat the heavy whipping cream just until it begins to boil. Watch it closely to prevent boiling over.
- Pour the hot cream over the semi-sweet chocolate chips in a bowl. Let sit for 5 minutes to allow the chocolate to soften.
- Stir gently until the ganache is smooth and glossy. This richness will make an extraordinary topping for your cake.
Assemble the Cake:
- Place one layer of chocolate cake on your serving plate. This is the base of the dessert.
- Remove the cheesecake from the springform pan. It should come out easily now that it’s firm. Place it on top of the first chocolate cake layer.
- Gently add the second layer of chocolate cake on top of the cheesecake layer. This towers beautifully and makes an impressive statement.
- Generously pour the ganache over the top, letting it drizzle down the sides for a tremendous visual appeal.
- Finish by adding the whipped topping in dollops around the edges and garnish with halved Oreo cookies on top.
