Directions

  1. Prepare Your Workspace: Start by neatly arranging all your ingredients. This will help make your cooking process more organized and efficient.

  2. Sauté Aromatics: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3–4 minutes. Include the minced garlic and give it a tremendous stir, cooking for another minute until fragrant.

  3. Cook the Chicken: Add the cubed chicken breast to the skillet. Season it with salt, pepper, paprika, and oregano. Cook until the chicken pieces are no longer pink, about 6–8 minutes.

  4. Incorporate the Vegetables: Once the chicken is cooked through, toss in the mixed vegetables. Stir them gently into the pan, combining them with the chicken and aromatics. Allow this mixture to cook for another 4–5 minutes, letting the vegetables soften while maintaining a bit of crunch.

  5. Add the Rice: Sprinkle the rice evenly over the chicken and vegetable mixture. Don’t stir yet! Pour the broth over the top, ensuring the rice is fully submerged. This step is crucial as it will help you achieve that tremendous layer of flavor.

  6. Bring to a Boil: Increase the heat to bring the broth to a boil. Once bubbling, reduce the heat to low, cover the skillet, and let it simmer for 15–20 minutes. Resist the urge to lift the lid; this allows the steam to create the perfect cooking environment.

  7. Check for Doneness: After the cooking time, lift the lid cautiously to check if the rice has absorbed all the broth. If it’s still a bit watery, cover it again and give it a few more minutes.

  8. Fluff and Serve: Once the rice is cooked, remove the skillet from heat. Use a fork to gently fluff the rice, mixing everything together beautifully. Taste for seasonings and adjust as needed.

  9. Garnish: Serve warm, topped with freshly chopped parsley and lemon wedges for an extra burst of brightness.
