Ingredients
The Base
- 1 cup of rice (jasmine or basmati for fragrance)
- 2 cups of chicken or vegetable broth
- 2 tablespoons of olive oil
- 1 medium onion, finely chopped
- 2 cloves of garlic, minced
The Filling
- 1 pound of chicken breast, cubed (or chickpeas for a vegetarian version)
- 2 cups of mixed vegetables (such as bell peppers, carrots, and green beans)
- 1 teaspoon of paprika
- 1 teaspoon of dried oregano
- Salt and pepper to taste

- Fresh parsley, chopped
