Old-Fashioned Norwegian Rhubarb Cake

Directions

  1. Preheat your oven to 350°F (175°C). This step is critical as it sets the perfect stage for even baking.

  2. Grease and flour a 9-inch round cake pan. Ensuring your pan is well prepared will make it easier for your cake to come out seamlessly.

  3. In a medium bowl, whisk together the flour, baking powder, and salt. This combines the dry ingredients and helps to aerate the mixture, making it easier to incorporate into the wet ingredients.

  4. In a large bowl, cream the softened butter and granulated sugar until light and fluffy. This step is vital, as it creates a tremendous base for the cake, helping to trap air into the mixture for a lighter texture.

  5. Add the eggs one at a time, mixing well after each addition. This method ensures that the eggs are fully incorporated, which is key for the cake’s structure.

  6. Stir in the vanilla extract, infusing a deep warmth into your batter.

  7. Alternate adding the dry flour mixture and the milk to the butter mixture, starting and ending with the flour. Mix each addition until just combined, taking care not to over-mix.

  8. Fold in the chopped rhubarb gently, ensuring that the pieces are evenly distributed throughout the batter.

  9. Pour the batter into the prepared cake pan, smoothing the top with a spatula for an even bake.

  10. Bake in the preheated oven for 45-50 minutes, or until a toothpick inserted in the center comes out clean. Your kitchen will soon be filled with an incredible aroma!

  11. Once baked, cool the cake in the pan for 10 minutes. This allows it to set properly before transferring.

  12. Finally, transfer the cake to a wire rack to cool completely. This step is essential for maintaining a tender texture.
