Old Fashioned Donuts

Directions

  1. Prepare the Dry Ingredients
    In a large mixing bowl, combine the flour, granulated sugar, baking powder, salt, and nutmeg. Use a whisk to ensure all the dry ingredients are well-blended. This step is essential as it helps distribute the baking powder evenly, leading to tremendous rise and fluffiness in your donuts.

  2. Mix the Wet Ingredients
    In a separate bowl, crack the two large eggs and whisk them until frothy. Gradually add the whole milk and melted unsalted butter. Whisk this mixture until it becomes homogeneous, ensuring a smooth blend before adding it to the dry ingredients.

  3. Combine Wet and Dry Ingredients
    Pour the wet mixture into the bowl containing the dry ingredients. Use a spatula to gently mix them together until just combined. Avoid overmixing as this can lead to dense donuts rather than the light, airy texture we desire.

  4. Shape the Dough
    Transfer the dough onto a floured surface. Roll it out to about 1/2 inch thick. Use a donut cutter or two different-sized round cutters to cut out donuts and donut holes. Transfer the shaped donuts to a parchment-lined baking sheet.

  5. Heat the Oil
    In a deep fryer or a heavy pot, heat oil to 375°F (190°C). A kitchen thermometer is recommended for accuracy. The oil temperature is crucial for achieving that perfect golden brown finish, so take your time with this step.

  6. Fry the Donuts
    Once the oil is hot, carefully place the donuts into the frying oil. Fry each donut for about 1-2 minutes per side until they reach a beautiful golden brown. It’s always exciting to see them puff up and take on that perfect finish!

  7. Drain Excess Oil
    Using a slotted spoon or spider strainer, carefully remove the donuts from the oil. Allow them to drain on paper towels to remove excess oil. This keeps the donuts delightfully light and not overly greasy.

  8. Finish and Serve
