Old Fashioned Chocolate Pie with Golden Meringue

Directions

  1. Begin by baking the pie crust according to the instructions provided on the package or your favorite pie crust recipe. After baking, set it aside to cool completely.

  2. In a medium saucepan, whisk together the 1/2 cup cocoa powder, 1 cup sugar, 1/4 cup flour, and 2 cups milk until the mixture is smooth. This step is crucial as it sets the foundation for your tremendous chocolate filling.

  3. Add in the 3 egg yolks and 1/4 cup butter to the saucepan. Cook this mixture over medium heat, stirring constantly until it thickens into a creamy filling, which should take about 8 to 10 minutes.

  4. Once your filling has thickened, remove it from the heat and stir in 1 teaspoon of vanilla extract. Now, pour this delectable chocolate filling into your baked pie crust.

  5. In a clean mixing bowl, beat the 3 egg whites along with 1/4 teaspoon of cream of tartar until soft peaks begin to form.

  6. Gradually add 1/2 cup of sugar while continuing to beat the egg whites. You want to whisk until you achieve stiff peaks that are glossy and smooth. This is where the meringue’s tremendous texture comes from.
