No-Bake Peanut Butter Cheesecake

Directions

  1. Prepare the crust. In a mixing bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Mix until the crumbs are evenly coated and resemble wet sand.

  2. Press into the pan. Using the back of a measuring cup or your fingers, firmly press the mixture into the bottom of a springform pan. Ensure that it forms an even layer across the base.

  3. Refrigerate the crust. Place the pan in the refrigerator while you prepare the filling. This will help the crust set properly, providing that tremendous crunch when you serve your cheesecake.

  4. Make the filling. In a large mixing bowl, whip the heavy cream until stiff peaks form. Make sure your cream is cold for the best results.

  5. Beat the cream cheese mixture. In a separate bowl, combine the softened cream cheese, peanut butter, powdered sugar, and vanilla extract. Beat until the mixture is smooth and creamy, without any lumps.

  6. Fold in heavy cream. Gently fold the whipped heavy cream into the peanut butter mixture. This technique ensures that your filling remains light and airy, adding to the tremendous texture of the cheesecake.

  7. Add mix-ins. Carefully fold in the mini chocolate chips and Reese’s Pieces to incorporate delightful surprises with each bite.

  8. Pour the filling over the crust. Once mixed, pour the filling onto the chilled crust, smoothing the top with a spatula.

  9. Prepare the topping. In a clean bowl, whip the heavy cream with powdered sugar until stiff peaks form again.

  10. Spread the topping. Carefully layer the whipped cream mixture over the filling, spreading it evenly to give a beautiful finish.

  11. Decorate. Sprinkle the remaining mini chocolate chips, Reese’s Pieces, and assorted mini chocolate candies on top.

  12. Drizzle chocolate syrup. For a final touch, generously drizzle chocolate syrup across the top, enhancing the presentation and flavor.

  13. Chill. Place the assembled cheesecake back in the refrigerator, allowing it to set for at least 4 hours, or overnight for the best results. This cooling time is crucial for the flavors to meld beautifully.
