Once the oats have soaked, combine them with the wet and dry ingredients, stirring gently until everything is incorporated.

Heat a nonstick skillet over medium heat, and spoon the batter onto the skillet to form pancakes. Cook until bubbles form on the surface, then flip and cook until golden brown.

Serve your pancakes warm with maple syrup, a sprinkle of mini chocolate chips, or sliced almonds as desired.
