Ms. Johnnie Ruth’s Pound Cake

Directions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 10-inch bundt or tube pan. This ensures a tremendous release of the cake once it’s baked, leading to a perfect presentation.

  2. In a bowl, combine the flour, baking powder, and salt; set aside. This step is crucial for ensuring that the cake rises evenly and maintains its wonderful structure.

  3. In a large mixing bowl, cream the softened butter and granulated sugar until light and fluffy. This process introduces air into the mixture, creating a tender texture that will make each bite feel like a hug.

  4. Add the eggs one at a time, mixing well after each addition. This gradual integration is key to a tremendous emulsion that binds everything together beautifully.

  5. Gradually add the dry ingredients to the wet mixture, and mix until just combined. Be careful not to overmix, as this can lead to a dense cake instead of the fluffy texture that we desire.

  6. Pour the batter into the prepared pan and smooth the top. It’s wonderful to watch as the batter settles perfectly in the pan, ready to rise in the oven.

  7. Bake for 60-70 minutes or until a toothpick inserted in the center comes out clean. The aroma will fill your kitchen, leaving you in a state of anticipation for that first slice.

  8. Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely. This resting period helps the cake to firm up and makes it easier to slice, ensuring a tremendous final presentation.
