Mozzarella Stuffed Soft Pretzels

Directions

  1. Activate the Yeast: In a bowl, combine 1 1/2 cups of warm water, 1 tablespoon of sugar, and 1 packet of active dry yeast. Let the mixture sit for about 5 minutes until it becomes frothy. This is crucial for a tremendous rise in the dough.

  2. Prepare the Dough: In a large mixing bowl, combine 4 cups of all-purpose flour and 1 teaspoon of salt. Gradually add the yeast mixture to the flour mixture, stirring to combine. Knead the dough until it becomes soft and elastic, about 5 to 7 minutes.

  3. Let It Rise: Shape the kneaded dough into a ball, place it in a lightly greased bowl, and cover it with a clean kitchen towel. Let it rise in a warm area for approximately 1 hour, or until it has doubled in size. This is when the dough develops its tremendous texture.

  4. Preheat the Oven: While the dough is rising, preheat your oven to 450°F (230°C). This high temperature will ensure that the pretzels bake to a beautiful golden brown.

  5. Shape the Pretzels: Once the dough has risen, punch it down to release the air. Divide the dough into 12 equal pieces. Roll each piece into a rope about 20 inches long. Flatten the rope slightly, place a piece of mozzarella cheese at the center, and fold the dough over the cheese. Shape it into a pretzel by twisting the ends together.

  6. Boil the Pretzels: In a large pot, bring about 10 cups of water to a boil. Add 1/4 cup of baking soda to the boiling water. Carefully dip each pretzel into the boiling water for about 30 seconds. This step is essential as it gives the pretzels their signature chewy texture.

  7. Prepare for Baking: Remove the pretzels from the boiling water and place them on a baking sheet lined with parchment paper. Whisk together 1 egg and brush the egg wash onto each pretzel to give it a lovely sheen. Sprinkle coarse salt on top for added flavor.

  8. Bake to Golden Perfection: Place the baking sheet in the preheated oven and bake the pretzels for about 12 to 15 minutes, or until they are golden brown. Enjoy them warm, and watch as the mozzarella oozes deliciously when bitten into.
