Preheat your oven to 325°F (163°C) and grease a 9-inch springform pan. This allows for easy removal later—and we want everything to go smoothly for this tremendous cheesecake!

For the crust: In a large bowl, combine the Oreo crumbs with the melted butter. Mix until the crumbs are well-coated. Press this mixture firmly into the bottom of the prepared springform pan, creating an even layer. Bake for 10 minutes, then let it cool while you prepare the filling.

For the cheesecake filling: In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy. Gradually add the granulated sugar, mixing until well incorporated and fluffy. Next, beat in the sour cream and vanilla extract until the mixture is uniform.

Now, add the eggs one at a time. Beat well after each addition to ensure they blend in smoothly. This step is crucial for that tremendous creamy texture we desire. After all the eggs are incorporated, add in the cocoa powder and red food coloring, mixing just until fully incorporated.

Carefully pour the cheesecake batter into the cooled crust, spreading it evenly with a spatula. It’s okay if it’s a little messy; a little love always adds character to your creation!

Bake for 60-70 minutes, or until the center is set and the edges are lightly browned. Once baked, turn off the oven and allow the cheesecake to cool in the oven with the door slightly open for one hour. This will help prevent cracks—a common enemy of cheesecakes.

For the ganache drip: In a microwave-safe bowl, combine the semi-sweet chocolate chips and heavy cream. Heat them in 30-second intervals, stirring after each, until you achieve a smooth consistency.
