Mocha Cheesecake Cake

Directions

  1. Prepare the Cheesecake Layer
    Begin by preheating your oven to 325°F (163°C). Grease and line the bottom of a springform pan to prevent sticking. In a large mixing bowl, beat the softened cream cheese and granulated sugar together until smooth and creamy. Add the eggs, one at a time, followed by sour cream, vanilla extract, and the dissolved coffee granules. Mix on low until everything is well combined. Pour this tremendous mixture into the prepared springform pan and bake for 45-50 minutes, or until the center is set but still slightly jiggly. Once done, remove from the oven and allow it to cool. Refrigerate for at least 4 hours or overnight for the best flavor.

  2. Make the Mocha Cake Layers
    Preheat the oven to 350°F (175°C). Prepare two 9-inch cake pans by greasing and flouring them. In a large bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt. In another bowl, mix granulated sugar, buttermilk, vegetable oil, eggs, and vanilla extract until smooth. Gradually stir the dry ingredients into the wet mixture. Finally, add the hot coffee and stir until the batter is combined. Pour the cake batter evenly into the prepared pans and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Allow the cakes to cool in the pans for 10 minutes before transferring them to wire racks to cool completely.

  3. Prepare the Mocha Frosting
    In a large mixing bowl, beat the softened unsalted butter with an electric mixer until creamy. Gradually add in the powdered sugar and cocoa powder while alternating with the dissolved coffee and heavy cream. Mix until the frosting becomes fluffy and smooth. Add the vanilla extract and beat again for a few seconds.

  4. Assemble the Cake
    Once the cheesecake layer has cooled and the cake layers are completely cooled, it’s time to assemble. Start with one chocolate cake layer on a serving plate. Spread a generous amount of mocha frosting on top. Place the cheesecake layer carefully on top and add more frosting. Top with the second chocolate cake layer. Frost the top and sides of the entire cake with the remaining mocha frosting. For a finishing touch, garnish the top with chocolate shavings or curls, and scatter some coffee beans or chocolate-covered espresso beans for an elegant look.

  5. Chill and Serve
    Before serving, refrigerate the cake for at least an hour to set the frosting. Slice and enjoy the tremendous combination of flavors in every bite!
