Mixed Fruit Yogurt Cake

Ingredients

The Base

  • 1 1⁄2 cups (190g) all-purpose flour
  • 1 cup (200g) sugar
  • 1 cup (240g) plain or vanilla yogurt
  • 1⁄2 cup (120ml) vegetable oil
  • 2 large eggs
  • 1 1⁄2 tsp baking powder
  • 1⁄2 tsp baking soda
  • 1⁄4 tsp salt
  • 1 tsp vanilla

The Filling

  • 1 cup (150–180g) mixed fruit, chopped (berries, mango, pineapple, apple, peaches — fresh or frozen)
  • 1 tbsp flour (to toss the fruit)

Optional Glaze

  • 1 cup (120g) powdered sugar
  • 2–3 tbsp yogurt or milk
  • 1⁄2 tsp vanilla
