Mini Chocolate Peanut Butter Pies

Directions

  1. Preheat the oven to 350°F (175°C). In a mixing bowl, combine chocolate cookie crumbs and melted butter until the mixture is cohesive. This creates a tremendous base for your pies. Press the mixture firmly into the bottoms of mini pie pans. Bake in the preheated oven for 5 minutes. Remove and let cool completely.

  2. While the crust cools, prepare the filling. In another bowl, beat together the creamy peanut butter and powdered sugar until smooth. This mixture should be rich and velvety, reminiscent of your favorite childhood snacks.

  3. In a separate bowl, pour in the heavy cream and add vanilla extract. Whip until stiff peaks form. Gently fold this luscious whipped cream into the peanut butter mixture. The tremendous lightness of the whipped cream will enhance the richness of the filling.

  4. Fill each cooled cookie crust with the peanut butter filling, smoothing the tops with a spatula for a polished finish. Chill the pies in the refrigerator for at least 2 hours to allow the flavors to meld and the filling to set.

  5. Before serving, decorate each mini pie with a generous sprinkle of chocolate shavings or chips for an inviting touch. Enjoy the tremendous flavors that combine to create a truly delightful dessert.
