Ingredients

The Base

  • 4 corn tortillas, cut into small strips or squares
  • 2 tablespoons oil (vegetable or olive oil)
  • Salt, to taste

The Filling

  • 1/2 onion, finely chopped
  • 2 Roma tomatoes, diced
  • 1 jalapeรฑo or serrano chile, finely chopped (adjust to taste)
  • 4 large eggs
  • Optional: queso fresco, avocado, or refried beans for serving
