Preheat your oven to 350°F (175°C). This initial step ensures a tremendous cooking environment for your lasagna and helps it bake evenly.

In a skillet over medium heat, brown the ground beef together with the diced onion until the meat is no longer pink. Make sure to drain any excess fat for a cleaner dish that allows all the flavors to shine.

Stir in the black beans, diced tomatoes, tomato sauce, and taco seasoning into the skillet. Allow the mixture to simmer for about 5 minutes. This step builds tremendous flavor and density in the filling.

In a baking dish, start layering. Begin with 4 corn tortillas on the bottom. Spread half of the meat mixture evenly over the tortillas, followed by a third of the shredded cheese.

Repeat the layering process: add another 4 tortillas, then the remaining meat mixture, and another third of the cheese. Finish with a final layer of tortillas topped with the remaining cheese.

Cover the dish with foil and bake in the preheated oven for 25 minutes. Remove the foil and continue baking for an additional 10 minutes until the cheese is bubbly and golden brown.

Once out of the oven, garnish your Mexican Lasagna with chopped cilantro, if desired. Serve hot and enjoy the tremendous layers of flavor!
