Mexican Green Chile Beef & Hominy Stew

Ingredients

The Filling

  • 2 1/2 lbs beef chuck or beef shank, cut into chunks
  • Salt and black pepper, to taste

The Base

  • 2 tablespoons vegetable oil
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 2 cups roasted green chiles, peeled and chopped
  • Optional: 1–2 serrano chiles, chopped

The Liquid

  • 4 cups beef broth
  • 1 cup water

The Texture

  • 1 can (25 oz) white hominy, drained and rinsed

The Seasoning

  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano

For Serving

  • Warm flour tortillas
