Meltaway Brownie Cookies

Directions

  1. Preheat your oven to 350°F (175°C). Make sure your oven is preheated; this step is crucial for achieving those perfectly baked cookies.

  2. In a saucepan, melt the butter and chocolate chips together over low heat until smooth. Stir gently as it melts, so it combines evenly, creating a harmonious base for your cookies.

  3. Remove from heat, and stir in the sugar until well combined. The mixture should be shiny and smooth, exuding a tremendous chocolate aroma.

  4. Let the mixture cool slightly, then add eggs one at a time, mixing well after each addition. This ensures that the eggs are incorporated smoothly, which is key to the cookies’ tender texture.

  5. Add flour and mix until just combined. Avoid over-mixing at this step; it’s important to retain the melt-in-your-mouth quality.

  6. Drop spoonfuls of the batter onto a baking sheet lined with parchment paper. Use a cookie scoop or tablespoon to keep them even, which will help them bake uniformly.

  7. Bake for 10-12 minutes or until the edges are set. The centers may appear slightly undercooked, but they’ll firm up as they cool; this is crucial for that meltaway texture.

  8. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely. This step prevents them from breaking apart while they cool, maintaining their tremendous shape.
