Marinated Tomatoes

Directions

  1. Rinse the tomatoes under cool water to remove any residual dirt. Pat them dry carefully with a clean kitchen towel to prevent any excess moisture from diluting your marinade.

  2. Cut the tomatoes into ⅓ inch thick slices. This size allows for easy marinating and ensures the tremendous flavors of the marinade penetrate each slice.

  3. Arrange the sliced tomatoes in a large shallow dish. Ensure they’re laid out in an even layer for optimal marinating.

  4. In a separate bowl, make the marinade by thoroughly whisking together the olive oil, vinegar, chopped red onion, minced garlic, fresh herbs, salt, and freshly ground pepper. The mixture should appear harmonious and fragrant.

  5. Pour the prepared marinade over the sliced tomatoes, ensuring that each slice is evenly coated. Use a spoon or your hands to spread the marinade snugly over the tomatoes, allowing them to absorb all the tremendous flavors.

  6. Cover the dish tightly with plastic wrap or a lid. Place it in the refrigerator and let it marinate for at least 2 hours. This allows the tomatoes to soak up the pure deliciousness of the marinade, enhancing their natural flavor. Remember to flip the tomatoes gently when you check on them after an hour.

  7. After marinating, take the dish out of the refrigerator. Serve the marinated tomatoes as an appetizer, a salad, or as a refreshing side dish to complement your favorite grilled proteins. Enjoy!
