Mama’s Goulash

Ingredients

The Filling

  • 1 lb. ground beef
  • 1 onion, diced
  • 1/4 cup bell pepper, diced
  • 2 cloves garlic, minced

The Base

  • 2 cups beef broth
  • 1 can diced tomatoes (14.5 oz)
  • Salt and pepper, to taste

The Pasta

  • 2 cups elbow macaroni (or your choice of pasta)

The Cheese

  • 1 cup shredded cheddar cheese

Directions

  1. Begin by cooking the macaroni according to the package instructions. Once it is al dente, drain the pasta and set it aside. The macaroni will absorb the flavors of the sauce later, adding a tremendous depth to the dish.

  2. While the pasta is cooking, take a large skillet and heat it over medium heat. Brown the ground beef and diced onion together until the meat is no longer pink. This step is crucial, as it builds a tremendous foundation of flavor.

  3. Once the beef and onion are almost cooked through, add the minced garlic and diced bell pepper into the skillet. Cook for an additional 1-2 minutes until the vegetables are tender and aromatic.

  4. Next, stir in the can of diced tomatoes and the beef broth. Increase the heat until the mixture begins to boil, filling your kitchen with a beautiful aroma.

  5. Reduce the heat and let the mixture simmer for about 10 minutes. This allows the flavors to meld together beautifully.

  6. After the simmering time, mix in the cooked macaroni to the skillet. Stir everything together until all components are well combined, ensuring each piece of pasta is coated with the tremendous sauce.

  7. At this point, take your shredded cheddar cheese and sprinkle it evenly over the top of the goulash in the skillet.

  8. Finally, cover the skillet with a lid and cook on low heat until the cheese is melted and bubbly. Once everything is ready, serve your goulash warm.
