Preheat your oven to 325°F (163°C). It’s the perfect temperature for creating a tremendous cheesecake texture.

Prepare a 9-inch springform pan by greasing it lightly with butter or cooking spray. This step helps prevent sticking.

In a medium bowl, combine 1 1/2 cups of graham cracker crumbs with 1/4 cup sugar. Pour in the melted butter and mix until the crumbs are uniformly coated.

Press the graham cracker mixture firmly into the bottom of the prepared springform pan to form a solid crust. Bake this crust for about 10 minutes. Once finished, remove it from the oven and let it cool completely.

In a large mixing bowl, add 3 packages of softened cream cheese and 1 cup of sugar. Using an electric mixer, beat on medium speed until the mixture is smooth and creamy. Ensure no lumps remain for a perfect, smooth filling.

Incorporate 1 teaspoon of vanilla extract into the mixture and combine thoroughly.

Add 3 large eggs to the cream cheese mixture, one at a time. Be sure to mix well after each addition to achieve a tremendous smoothness in your filling.

Pour in 1/4 cup of fresh lemon juice and 1/4 cup of fresh lime juice, followed by 1 tablespoon of lemon zest and 1 tablespoon of lime zest. Mix until everything is well combined.

Gently fold in 1/2 cup of chopped pistachios and 1/2 cup of chopped cherries. This step adds texture and flavor, ensuring every bite is packed with delightful surprises.

Pour the cheesecake batter over the cooled crust in the springform pan. Use a spatula to smooth the top for a beautiful presentation.

Bake for 50 to 60 minutes, or until the center is nearly set but still slightly jiggly. The cheesecake will firm up as it cools.

Once baked, turn off the oven and leave the cheesecake inside with the door slightly ajar for about 1 hour. This method helps prevent cracking—a tremendous tip for a flawless dessert.

After the hour, transfer the cheesecake to the refrigerator and chill for at least 4 hours, or ideally overnight. This chilling time allows the flavors to meld beautifully.

When ready to serve, remove the cheesecake from the springform pan. Top generously with whipped cream, and garnish with whole cherries and a sprinkle of chopped pistachios.
