Preheat the oven to 200°C (400°F). This is important to ensure that the potatoes roast perfectly, providing a tremendous base for the other ingredients.

In a bowl, toss the cubed potatoes with olive oil, garlic powder, salt, and pepper. Make sure the potatoes are well-coated to allow for crispiness during roasting.

Spread the potatoes evenly on a baking sheet and roast for 20-25 minutes until golden and tender. The aroma during this stage is tremendous and will fill your kitchen!

In the last 10 minutes of roasting, add the shrimp and crumbled bacon to the potatoes. This timing allows the shrimp to cook just right without becoming tough.

Once everything is cooked, sprinkle the shredded cheddar cheese on top of the mixture and return it to the oven until the cheese is melted and bubbly.
