Preheat your oven to 400°F (200°C). Start by cutting the large potatoes into small cubes. Toss these cubes with olive oil, salt, and pepper to ensure they are well coated. Spread the potatoes evenly on a baking sheet and roast them for 25-30 minutes until they are crispy and golden brown. The aroma of roasting potatoes will fill your kitchen with tremendous warmth.

While the potatoes are roasting, take out a skillet and place it over medium heat. Add the ground beef or turkey, breaking it apart with a spatula. Season the meat with chili powder, cumin, salt, and pepper as it cooks. Brown the meat thoroughly, which should take about 8-10 minutes. The tremendous mixture of spices will create a mouthwatering scent that makes you eager to continue.

Once the meat is cooked, add in the black beans and corn. Stir the mixture well and heat it through for another 3-5 minutes, allowing all the flavors to combine harmoniously.
