Loaded Cajun Seafood Stuffed Potatoes

Directions

  1. Preheat the oven to 400°F (200°C). Begin by washing the baking potatoes thoroughly to remove any dirt. Using a fork, pierce each potato several times. This step is essential as it allows steam to escape, preventing the potatoes from bursting in the oven. Rub them with olive oil and sprinkle generously with salt, ensuring a flavorful skin. We are setting the stage for tremendous flavor here. Bake the potatoes for approximately 45-60 minutes until they are tender and fully cooked.

  2. While the potatoes are in the oven, prepare the filling. In a sizable mixing bowl, combine the chopped shrimp, crab or seafood mix, shredded cheese, sour cream, chopped green onions, Cajun seasoning, salt, and pepper. Stir the mixture well to ensure that every ingredient is evenly incorporated. The scents of the Cajun seasoning will infuse the seafood, creating a tremendous aroma that will make your mouth water in anticipation.

  3. Once the potatoes are done baking, remove them from the oven and allow them to cool for a few minutes. Carefully cut each potato in half lengthwise, ensuring not to cut all the way through. Gently scoop out some of the flesh of the potatoes, leaving enough to maintain their structure. The flesh you remove can be incorporated into the filling, so don’t toss it away just yet!

  4. Take the scooped-out potato flesh and mix it with the seafood mixture you prepared earlier. Stir thoroughly to achieve a consistent blend. Now, it’s time to fill those potato skins! Generously spoon the seafood mixture back into each hollowed-out potato half. The vibrant colors of the filling will peek through, promising tremendous taste.

  5. Return the stuffed potatoes to the oven for an additional 15-20 minutes. You want the cheese on top to melt and become bubbly, creating a delicious golden surface that beckons to be devoured. The aroma wafting through the kitchen at this point is truly mouthwatering.

  6. Once they are hot and the cheese is beautifully melted, remove the stuffed potatoes from the oven. Serve these delightful creations hot, garnishing with extra green onions for a fresh, colorful touch. The contrast of the golden cheese and the bright green onions is visually tempting, inviting everyone to dig in.
