Lemon Oatmeal Crumble Bars

Directions

  1. Preheat your oven to 350°F (175°C) and grease an 8×8 inch baking dish. This step ensures that your bars slide out smoothly after baking.

  2. In a bowl, combine the rolled oats, all-purpose flour, brown sugar, baking soda, and salt. Mix well until the dry ingredients are evenly distributed. This step lays the foundation for the tremendous flavor of your base.

  3. Add in the softened butter to the dry mixture. Blend it until the mixture resembles coarse crumbs. This part is crucial; the right texture will make your crumble buttery and delicious.

  4. Press half of the crumble mixture into the bottom of the prepared dish to form a crust. Make sure it’s packed tightly for a solid base that holds up to the lemon curd.

  5. Spread the lemon curd evenly over the crust. The tangy flavor of the lemon will cut through the sweetness of the oat topping, creating a balancing effect.
