Lemon Meringue Pie Cannolis

Directions

  1. In a bowl, mix together the lemon curd with the freshly grated lemon zest. This step is tremendous as it elevates the flavor and adds depth to your filling.

  2. In a separate bowl, whip the heavy cream with the powdered sugar and vanilla extract until soft peaks form. This should take about 2-3 minutes, and it’s truly amazing how fluffy this mixture becomes.

  3. Gently fold the whipped cream into the lemon curd mixture until fully combined. Take your time with this step, as the goal is to maintain the lightness of the whipped cream while blending in the vibrant lemon flavors.

  4. Using a piping bag or a simple zip-top bag with the corner cut off, fill the cannoli shells with the lemon meringue filling. Be generous with your filling; each bite should be bursting with that tremendous lemon flavor.

  5. Top each filled cannoli with toasted meringue. You may use a kitchen torch for toasting, or pop them under a broiler for a minute. Serve chilled for the best texture and flavor experience.
