Begin by heating the olive oil in a spacious skillet over medium heat. Once the oil is shimmering, add the shrimp along with the minced garlic. Cook until the shrimp turns a beautiful pink color, which should take about 2-3 minutes. The aroma will be tremendous, signaling that it’s time to remove the shrimp from the pan and set them aside.

In the same skillet, add the sliced bell peppers, zucchini, and cherry tomatoes. These veggies will provide a tremendous source of color and nutrition to your dish. Sauté them until they become tender, which will take approximately 5-7 minutes.

Now, return the cooked shrimp to the skillet along with the sautéed veggies. Squeeze in the fresh lemon juice and add the lemon zest, dried basil, salt, and pepper to taste. Stir everything together to combine the flavors beautifully.

Allow the skillet to simmer for another 2-3 minutes. This short cooking time will let the flavors meld together, creating a tremendous and fragrant dish.
