In a bowl, combine the olive oil, lemon juice, lemon zest, garlic, dried oregano, salt, and pepper. Whisk everything together to create a tremendous marinade that will infuse the chicken with flavor.

Add the chicken pieces into the marinade, making sure that every piece is well-coated. Use your hands to mix gently, ensuring that the flavors meld perfectly.

Cover the bowl with plastic wrap or a lid and allow the chicken to marinate in the refrigerator for at least 30 minutes. This resting period helps the chicken absorb the tremendous flavor of the marinade.

Preheat your oven to 400°F (200°C). This temperature will help achieve that golden-brown color we desire.

Spread the marinated chicken pieces evenly on a baking sheet lined with parchment paper. Make sure the pieces are not crowded; you want them to cook evenly and develop that perfect texture.

Bake for 20-25 minutes or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C). The outside should be golden, and the aroma will be incredibly inviting.

Once finished, take the baking sheet out of the oven, and sprinkle fresh parsley over the chicken bites before serving to add a touch of color and freshness.
