Preheat the oven to 325°F (160°C). This step is crucial to ensure an even bake for your tremendous cheesecake.

In a mixing bowl, combine the graham cracker crumbs, 1/2 cup of sugar, and melted butter. Mix until the crumbs are evenly coated. Press this mixture firmly into the bottom of a 9-inch springform pan to create a sturdy base for your cheesecake.

In a large bowl, beat the softened cream cheese and 1 cup of sugar until the mixture is smooth and creamy. This can take a few minutes, but it’s worth the effort for that tremendous texture.

Add eggs, sour cream, flour, lemon juice, and lemon zest to the cream cheese mixture. Mix until everything is well combined and smooth.

Pour the cream cheese mixture over the prepared crust in the pan, spreading evenly.

Bake in the preheated oven for 55-60 minutes, or until the center is set. It should still have a slight jiggle but not be liquid.

Turn off the oven and leave the cheesecake inside for 1 hour. This gentle cooling helps prevent cracks from forming on the surface.

Remove from the oven and allow the cheesecake to cool to room temperature. Once cooled, refrigerate for at least 4 hours, or overnight for best results, before serving.
