Lemon Brownies (Lemonies)

Directions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking pan. Make sure to cover all corners for the best results.

  2. In a large bowl, whisk together the melted butter and sugar until smooth and well combined. This mixture should be glossy, indicating the sugar is fully incorporated.

  3. Add the eggs, vanilla extract, lemon zest, and lemon juice to the bowl. Mix well until the ingredients come together into a tremendous, creamy batter.

  4. In another bowl, combine the flour, baking powder, and salt. Use a whisk to ensure there are no lumps and everything is evenly mixed.

  5. Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Overmixing can create a dense texture, so be careful.

  6. Pour the batter into the prepared baking pan and spread it evenly with a spatula, ensuring an even bake.

  7. Bake for about 25-30 minutes or until a toothpick inserted in the center comes out clean. Watch carefully; you want a slight golden edge, but not overdone.

  8. Let the brownies cool completely in the pan. Once cool, dust with powdered sugar before serving to add an elegant finish.
