Directions
-
Preheat the Oven:
Begin by preheating your oven to 350 degrees F. This temperature will ensure that your cake bakes evenly for that perfect texture. -
Prepare the Baking Pan:
Grease a 9×13 baking dish and line it with parchment paper. Leave some overhang on the two long sides of the pan. This clever trick will make it tremendously easier to lift the cake out once it’s baked. -
Combine Dry Ingredients:
In a medium mixing bowl, whisk together the dry ingredients: flour, baking powder, baking soda, and salt. This step helps to evenly distribute the leavening agents and ensures your cake rises beautifully. -
Cream the Butter and Sugar:
Using a stand mixer fitted with the paddle attachment, or a hand mixer, cream together the softened butter and granulated sugar until the mixture becomes light and fluffy. This step is crucial as it adds air to the batter, creating a tremendous texture. -
Incorporate Wet Ingredients:
Add the eggs, buttermilk, and vanilla to the butter-sugar mixture. Mix on low speed until all the ingredients are well incorporated, ensuring you scrape down the sides of the bowl as necessary. -
Add Dry Ingredients:
Carefully add the bowl of dry ingredients to the mixer. Mix on a low speed until no streaks of flour remain. The batter may be slightly thick, and this is perfectly normal! -
Stir in Lemon Juice and Zest:
Gently fold in the lemon juice and zest to enhance the flavor profile. The aroma that wafts from the batter is truly tremendous at this point. -
Fold in Blueberries:
Using a spatula, gently stir in the blueberries that you’ve previously tossed with flour. This prevents them from sinking to the bottom of the cake during baking. -
Bake the Cake:
Pour the batter into the prepared baking dish, spreading it evenly. Bake in the preheated oven for about 40-45 minutes. To check for doneness, insert a toothpick into the center; it should come out with moist crumbs, not wet batter. -
Cool the Cake:
Once baked, allow the cake to cool completely in the pan. If you prefer, you can lift it out using the parchment overhang for easier slicing and serving. -
Prepare the Glaze:
To make the glaze, combine the powdered sugar and lemon juice in a bowl and mix until smooth. Drizzle it over the cooled cake, allowing it to soak into the cake slightly. -
Garnish and Serve:
Once the glaze has hardened, garnish the cake with fresh fruit if desired. Cut into squares and serve. This cake is sure to impress everyone!
