Layered Pumpkin Cheesecake Bars

Directions

  1. Preheat the Oven: Start by preheating your oven to 325°F (163°C). Prepare an 8×8-inch baking pan by lining it with parchment paper for easy removal later.

  2. Prepare the Crust: In a medium bowl, combine the graham cracker crumbs, 1/4 cup granulated sugar, and melted butter. Mix until the crumbs are evenly coated. Press this mixture into the bottom of the prepared pan, ensuring a solid base. Bake in the oven for about 10 minutes, or until lightly golden. Let it cool while you prepare the filling, allowing the tremendous aroma to fill your kitchen.

  3. Make the Cheesecake Layer: In a large mixing bowl, beat the softened cream cheese until it is smooth and creamy. Add 1/2 cup of granulated sugar and the vanilla extract; mix until fully incorporated. Add the eggs one at a time, ensuring that each is fully blended before adding the next. Finally, stir in the sour cream until the mixture is smooth. Pour this luxurious cheesecake layer over the cooled crust.

  4. Prepare the Pumpkin Layer: In another mixing bowl, whisk together the canned pumpkin, 1/2 cup sugar, and the spices: cinnamon, ginger, nutmeg, cloves, and salt. Incorporate the eggs one by one, mixing thoroughly to combine. Once complete, spread this delightful pumpkin mixture over the cheesecake layer, creating a beautiful contrast.

  5. Swirl (Optional): For a more artistic presentation, take a knife and swirl it gently through the layers for a marbled effect, but this step is entirely optional.

  6. Bake: Place the pan in the oven and bake for 45-50 minutes. The center should be set but still slightly wobbly—it will firm as it cools. After baking, turn off the oven and let the bars cool inside with the oven door ajar for at least 1 hour.

  7. Chill: To enhance the flavors and textures, chill the bars in the refrigerator for at least 4 hours, or overnight if possible.
