Key Lime Cookies

Directions

  1. Preheat Your Oven: Start by preheating your oven to 350°F (175°C). This ensures that your cookies will bake evenly and achieve that perfect golden hue.

  2. Cream the Butters and Sugars: In a large mixing bowl, cream together the softened butter, sugar, and light brown sugar. Use an electric mixer on medium speed for about 2-3 minutes until the mixture is light and fluffy. This step is crucial as it incorporates air into the dough, contributing to its tremendous texture.

  3. Add the Egg and Vanilla: Beat in the egg and vanilla extract. Mix until fully combined, ensuring that the egg is integrated well into the butter mixture, which will add to the richness of the cookie dough.

  4. Incorporate Key Lime Zest: Gradually mix in the key lime zest. The aroma of the zest will be tremendous and invigorating, carrying that refreshing tropical scent.

  5. Combine Dry Ingredients: In another bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet mix, stirring gently until combined. Overmixing could lead to tough cookies, so be careful.

  6. Scoop the Dough: Use a cookie scoop or tablespoon to drop balls of dough onto a baking sheet lined with parchment paper. Leave about 2 inches of space between each ball.

  7. Bake: Place the baking sheet in the preheated oven and bake for 10-12 minutes, or until the edges are lightly golden. The centers may look slightly underbaked, but they will firm up as they cool. The aroma wafting through your kitchen will be tremendous at this stage!

  8. Cool the Cookies: Remove the cookies from the oven and let them cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.

  9. Prepare the Glaze: While the cookies cool, prepare the glaze. In a small bowl, whisk together the powdered sugar, key lime juice, milk, vanilla, and a pinch of salt (if using). The consistency should be smooth and pourable.

  10. Glaze the Cookies: Once the cookies are completely cooled, drizzle the glaze generously over each one. Finish with a sprinkle of key lime zest for that extra touch of flavor and elegance.
