Juicy Pineapple Heaven Cake

Directions

  1. Begin by preheating your oven to 350°F (175°C). This initial step sets the stage for your tremendous baking adventure.

  2. Grease and flour a 9×13 inch baking pan, ensuring it is well-prepared for your luscious cake.

  3. In a large bowl, whisk together the flour, granulated sugar, baking powder, baking soda, and salt. This dry mixture will play a crucial role in creating the structure of your cake.

  4. In another bowl, beat together the eggs, vegetable oil, vanilla extract, crushed pineapple with its juice, and buttermilk, mixing until well combined. The addition of crushed pineapple adds a tremendous amount of moisture to the batter.

  5. Gradually combine the wet ingredients into the dry ingredients, stirring just until blended. Be careful not to overmix; a few lumps are perfectly fine.

  6. Pour the batter into your prepared pan, spreading it evenly. The batter should look fluffy and delightful as it promises a wonderful outcome.

  7. Bake in your preheated oven for 45-50 minutes. Use a toothpick to check; it should come out clean when the cake is done.

  8. Once baked, remove the cake from the oven and allow it to cool completely in the pan.

  9. While the cake cools, make the frosting by beating together the cream cheese and softened butter in a large bowl until smooth and creamy.

  10. Gradually add the powdered sugar and vanilla extract, mixing until the frosting is light and fluffy.

  11. Gently fold in the drained crushed pineapple, adding that tropical flavor to your frosting.

  12. Once the cake is completely cool, spread the frosting evenly over the top. The cake will soon look as inviting as it will taste!

  13. Refrigerate the frosted cake for at least 1 hour before serving. This time allows the frosting to set beautifully.
