Italian Drunken Noodles

Directions

  1. Begin by heating the olive oil in a large skillet over medium heat. The oil should shimmer gently, signaling it’s ready for the next ingredient.

  2. Add the Italian sausage to the skillet. Cook it until it’s beautifully browned, making sure to break it apart as it cooks. The tremendous aroma of sizzling sausage will fill the kitchen, promising a delightful feast.

  3. Season the sausage with salt and freshly ground pepper to taste, allowing the seasoning to enhance the savory notes of the meat.

  4. Once the sausage is cooked through, add the thinly sliced onion and minced garlic to the skillet. Sauté them together until the onion is softened and translucent, about 2-3 minutes.

  5. Incorporate the sliced bell peppers into the skillet. Stir them well, making sure they blend with the sausage and onion mixture. Cook until the peppers become tender yet still maintain a pleasant crunch, roughly 4-5 minutes.

  6. While the sausage and vegetables are sizzling away, cook the rice noodles or fettuccine according to package instructions until al dente. Drain the noodles, reserving a bit of the cooking water.

  7. Add the cooked noodles into the skillet. Toss everything together, ensuring the noodles soak up the flavors from the sausage and vegetables. Drizzle in the soy sauce, oyster sauce (if using), and red chili paste for a tremendous kick. If the dish looks too dry, add a splash of the reserved pasta water.

  8. Serve the Italian Drunken Noodles hot, garnished with fresh herbs or chili flakes if desired, to elevate this delightful dish.
