Irresistible Easy Grilled Cheese Burrito You’ll Crave Again

Directions

  1. Prepare the Filling: Heat a large skillet over medium heat. Add the ground beef. Cook until it’s browned and crumbly, approximately 7-10 minutes. Break it up with a spatula for even cooking.

  2. Season the Beef: When the beef is cooked through, sprinkle in the taco seasoning. Stir well to combine. Add a splash of water if necessary. Let the mixture simmer for an additional 3-4 minutes to incorporate the flavors. This step creates a tremendous depth of flavor that is essential to the burrito.

  3. Mix in Rice: Stir in the cooked white rice. This not only enhances the texture but also helps to balance out the strong flavors of the seasoned beef. Ensure that everything is well combined.

  4. Add Cream and Sauces: Remove the skillet from heat and fold in the sour cream, nacho cheese sauce, and chipotle sauce. This is where the magic happens—these ingredients create a luscious, creamy filling that brings the dish to life.

  5. Prepare Tortillas: In another large skillet, heat one tablespoon of butter or oil over medium heat. Place one tortilla in the skillet, allowing it to warm slightly for about 30 seconds. Do not let it crisp up too much.

  6. Assemble the Burritos: Spoon a generous amount of the beef and cheese mixture onto the center of the warmed tortilla. Sprinkle with shredded cheddar and mozzarella cheese. The cheese will melt beautifully in the cooking process.

  7. Wrap and Cook: Fold in the sides of the tortilla over the filling, then roll it up from the bottom to enclose the mixture completely. Repeat this step for the remaining tortillas.

  8. Grill the Burritos: In the same skillet, add a little more butter or oil if necessary, and place the burritos seam side down. Grill until golden and crispy, about 3-4 minutes per side. Each flip reveals a tremendous, golden crust that contrasts perfectly with the cheesy filling.

  9. Serve: Once browned, remove the burritos from the skillet and let them cool slightly. Cut in half and enjoy while warm, with additional sour cream or salsa for dipping if desired.
