Irish Vegetable Soup

Directions

  1. In a large pot, heat olive oil over medium heat. This will create a tremendous aroma that prepares the kitchen for the deliciousness to follow.

  2. Add the onion, carrots, and celery; sauté until softened. You want these vegetables to lend their sweetness to the mix, so allow them to cook for about 5-7 minutes.
