- Preheat the grill to medium-high heat. This ensures a tremendous sear on your chicken, locking in those juicy flavors.
- Season the chicken breasts with salt and pepper. A simple yet effective step that enhances the natural taste of the chicken.
- Brush the honey BBQ sauce on both sides of the chicken. Don’t be shy with the sauce; this step is essential for that sweet, sticky exterior.
- Grill the chicken for about 6-7 minutes on each side, or until fully cooked and no longer pink in the center. Watch for that tremendous grill mark pattern that signals perfect cooking.
- In a separate pot, boil the diced potatoes until tender, about 15-20 minutes. Once fork-tender, drain well to remove excess moisture.
- In a bowl, mix together the olive oil, minced garlic, cooked potatoes, and grated Parmesan cheese. Get your hands in there and ensure every potato is coated with flavor.
- Spread the potato mixture on a baking sheet and roast in the oven at 400°F (200°C) for 10-15 minutes until crispy. The roasting process brings out their natural sweetness and gives them a lovely texture.
