Ingredients
The Filling
- 2 lbs beef chuck, cut into bite-size chunks

- 1 large onion, diced
- 3 cloves garlic, minced
- 1 1/2 lbs Yukon Gold or russet potatoes, peeled and cubed
The Flavor Enhancers
- 1 cup fire-roasted green chiles, chopped
- 1 cup fire-roasted diced tomatoes
- 4 cups beef broth
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1/2 tsp dried thyme or oregano
Optional Thickener and Garnish
- 1 tbsp flour (optional, for thickening)
- Fresh cilantro or parsley, chopped (for garnish)
