Homestyle Beef & Potato Stew with Fire-Roasted Chiles

Ingredients

The Filling

  • 2 lbs beef chuck, cut into bite-size chunks
  • Salt and black pepper to taste

The Base

  • 2 tbsp olive oil
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 1 1/2 lbs Yukon Gold or russet potatoes, peeled and cubed

The Flavor Enhancers

  • 1 cup fire-roasted green chiles, chopped
  • 1 cup fire-roasted diced tomatoes
  • 4 cups beef broth
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/2 tsp dried thyme or oregano

Optional Thickener and Garnish

  • 1 tbsp flour (optional, for thickening)
  • Fresh cilantro or parsley, chopped (for garnish)
