Homemade Vanilla Wafers

Directions

  1. Preheat your oven to 350°F (175°C). This step sets the stage for the tremendous baking experience about to unfold.

  2. In a large bowl, cream together the butter and sugar until light and fluffy. This process is crucial as it helps incorporate air into the mixture, resulting in a lighter texture for your wafers. Use a hand mixer or a stand mixer for efficiency.

  3. Beat in the egg, vanilla extract, and milk. The vanilla extract will help enhance that delightful fragrance, while the milk adds just the right amount of moisture.

  4. In another bowl, whisk together the flour, baking soda, and salt. This combines the dry ingredients evenly, ensuring a consistent texture throughout your cookies.

  5. Gradually add the dry ingredients to the wet ingredients, mixing until well combined. Aim for a smooth dough without over-mixing, as this helps maintain the incredible tenderness of the wafers.

  6. Drop tablespoonfuls of the dough onto baking sheets, leaving space between them. This allows the cookies to spread a bit while baking without merging into one giant treat.

  7. Bake for 10-12 minutes or until lightly golden. The aroma wafting from your oven will be tremendous, and you’ll find it hard to resist the temptation to sneak a taste.

  8. Allow to cool on the baking sheets for a few minutes before transferring to wire racks to cool completely. This crucial step ensures your wafers hold their shape and continue to crisp up.
