Homemade Snickers Bars

Directions

  1. Prepare Your Pan: Line an 8×8 inch pan with parchment paper. This step ensures that your Snickers bars release easily after they set, making for a tremendously smooth final presentation.

  2. Blend the Dates: In a food processor, blend the pitted dates until they reach a smooth, sticky consistency. This natural sweetness is a wonderful alternative to processed sugars and brings a tremendous amount of flavor to your filling.

  3. Combine Ingredients: Add the peanuts, peanut butter, honey or maple syrup, vanilla extract, and a pinch of salt into the food processor. Process the mixture until it’s well combined. You want it to maintain some texture from the peanuts for that delightful crunch.

  4. Press the Mixture into the Pan: Take the blended base and press it evenly into the prepared pan. Make sure you pack it tightly to create a solid foundation for your Snickers bars.

  5. Melt the Chocolate: In a microwave-safe bowl or a double boiler, melt the dark chocolate chips along with the coconut oil. Stir until the mixture is smooth and glossy. This heavenly topping will add a tremendous richness to your bars.

  6. Pour and Spread: Carefully pour the melted chocolate over the peanut layer in the pan. Use a spatula to spread it evenly across the top, ensuring every bit of the filling is covered.

  7. Chill and Set: Place the pan in the refrigerator for about 1 hour or until the chocolate is completely set. This chilling time allows the flavors to meld together and makes cutting the bars easier.

  8. Cut and Serve: Once set, remove the Snickers bar slab from the pan using the edges of the parchment paper. Cut it into bars of your desired size and enjoy your homemade creation!
